  2. Use Chana Daal.
  3. You need Toor daal.
  4. You need Urad daal.
  5. You need to prepare curd/ dahi.
  6. Use oil.
  7. You need to prepare curry leaves.
  8. Use mustard seeds.
  9. Provide carrot grated.
  10. Use Lauki grated and squeezed.

  1. Mix Rice and all the daals together. Wash and soak for about 4 hours..
  2. After 4 hours drain the mixture, add dahi and blend to a smooth paste..
  3. Cover the mixture and let it ferment overnight at room temperature. (You can add 1 tbsp Eno / fruit salt for instant fermentation and skip overnight soaking)..
  4. In the morning, add grated carrot and bottleguard, spices as per your taste. And mix well..
  5. In a big wok (kadhai) add oil, mustard seeds and Curry leaves and let it sputter..
  6. Add the mixture and cover it. cook on slow for about 13-15 mins..
  7. Using a plate, reverse it in the kadhai, and cook for another 10-12 mins on slow heat..
  8. Take it out in a plate, cut in pieces and set it hot with any chutney or as is..

This Gujarati handvo recipe comes from my sister's friend. It is one of the popular Gujarati recipe. Usually there is a special handvo cooker that is used in making handvo. Traditional Gujarati delicacy made with Rice and Lentil but to prepare instant, I use Semolina(Rava) and Chickpea Flour(Besan).
